So tonight i made the funnel cakes.
H-E-A-V-E-N!
2 Problems; 1. Cant freeze or refridgerate batter, must use all of it in one setting. I didnt know this at first. 2. The recipe i used said it made 4 large 12 inch funnel cakes, well i think that lady meant more like 4 pounds of cakes. I will have enough funnel cakes in my freezer to feed half of America if an emergency were to break out. LOL!
This recipe, super easy, super yummy, unless you plan on feeding an army please adjust this to your own desired quantity. Even if i only used half of this recipe it would have been too much for my two kids and i. ENJOY!
MIX Every thing!
4 large eggs
2 2/3 c milk
1/2 c + 2 tblspn granulated sugar
5 c flour (look how much flower that is, i should have known!)
1 tspn salt
1 tblspn + 1 tspn baking powder
I used a regular frying pan with an inch of oil in it. Got it heated up good. I used a cookie decorator throw away bag to 'funnel' the cake into the pan. Gold on one side, then flip to gold the other. Put on paper towel to drain grease, then powder with powdered sugar and if you would like your other choice of topping. We went the strawberry route but in my searches tonight i saw some people eat these like pancakes with syrup and others eat it with ice cream and caremel syrup. YUM! Oh and when you make your design in the pan dont make them to big, my first one was huge and wow what a pain to flip and what a splattered grease mess to clean up later.
