Blueberry Snack Cake



Made this yummy cake tonight. I made it in bread pans so that i could freeze some of it. Turned out great! YUMMY YUMMY! Oh i used fresh blueberries that i had frozen, and wow what a zest of blue berry taste these give!

Preheat oven 350 deg.

Ingredients:
2 c flour
1/2 c cold butter (unsalted)
1 c granulated sugar
1/2 c brown sugar
1 tspn baking powder
1 c milk (i was out of milk and used 2% evaporated milk)
2 eggs, separated
2 tspn vanilla
dashes of cinnamon
2 c blueberries (actually only as many as you want)

Directions:
In Mixing bowl combine flour and sugars.
Cut in Butter.
Take out 3/4 c for topping (i used only 1/2 c)
Add baking powder, milk, egg yolks, vanilla. Mix well.
In separate bowl beat egg whites until soft peaks form ( i did this by hand, not fun!) Add to batter.
Pour into greased 13*9*2 baking dish
Sprinkle with blueberries
Get your 3/4 topping you set aside, put a few dashes of cinnamon in it then mix well.
Add topping to top of cake.

Cook 30-35 minutes or until you can pull a clean knife from center.
If you use muffin pan, time will be less.
For my mini bread pan time was closer to an hour.
