Fudge and Summer. YUM!


I have tried more than enough times to make fudge. Yummy Delicious fattening fudge and every time i find that i am more of an expert at chocolate taffy than fudge. Some how accidentally if you dont make fudge then your making taffy, lol! Either way it gets tossed in the garbage with all my hopes of eating the whole pan, and my dreams of properly using a silly candy thermometer. But today, oh today was a very different day. I finally made fudge that when you cut it, it cubes into a square. It doesnt squish, pull form its self or stick to you. It really was live fudge. lol! So of course i tasted it assuming then it was horrible, NOPE Delicious as it should be. I finally did it, i finally made fudge. It is so yummy too and every one wants me to share and frankly i dont wanna! lol!

RECIPE:
3 cups milk chocolate chips
1 (14 ounce) can sweetened condensed milk
1/4 cup butter
1 cup chopped walnuts or other favorite nuts (optional)
1/8 tsp salt
1 teaspoon vanilla extract

Directions
Place milk chocolate chips, sweetened condensed milk, butter , salt and vanilla extract in large microwaveable bowl. Microwave on medium until chips are melted, about 2-5 minutes, stirring once or twice during melting. Stir in nuts, if desired.
Pour into 8×8-inch pan that you have lined with foil and coated with cooking spray. Refrigerate until set. Cut into squares and enjoy!

The past few days have been so beautiful here. We have spent some hours outside, me reading and the kids playing on the slip n slide. When i was a kid i was a pool kid, i loved the at home pools - adored them actually. Not mine, i bought this huge plastic pool last year on clearance and they just want to slip n slide. ha ha ha so they do and the pool is sadly thrown over a dog house waiting for its turn.
Tonight we had hot dogs and hamburgers, the traditional summer meal. My kids decided that is what we were going to have. And boy did they love it, my son at 2.5 hot dogs (chedderwerst dogs, the big ones) and half a cheese burger, my daughter at 1.5 hot dogs and half a cheese burger. I feel that is a lot but they must have been hungry. We did lunch today too, a snack and had breakfast. All this heat and out side play has got my kids running through some food. I bought them new cups with straws today to help keep them interested in drinking water also. It has been a beautiful couple of days, tonight it looks like it might rain. Its so beautiful out side, i dont mind. Plus my grass needs some water. lol!
Well other than out side summer play i have been reading a lot. My sister really wants me to read Harry Potter. So i started and finished book one in hours (2 days with kids of course) and no surprise it was just like the movie. So immediately i had to pick up another book to get my "that was a good read fix" and that one turned out to be well uhm a little more wow than i was expecting. It was good but wow, so i picked up another book and honestly i read it in a day and it was good but not enough umph to go with it, so i am on another book. This one i am reading super super slow to try and get the full effect and maybe cure my taste for literature. If this doesnt do it then im going back to my favorite - Steven King. He never lets me down, oh i also have the first book of the twilight series on its way. I am hoping it is a good read and would like to get it finished before all the movies come out. Wish me luck on that one.
The kids are asleep, the cat is crashed on my floor, my dog is hiding some where cooler than this room and it is time for me to join the sleep train. I am full and happy! No better way to go to bed than that.
I really miss my husband.
